The success of what we do depends on soil. Every day is a new challenge: the unpredictability of nature allows us to discover each day the effort and beauty that lies in every step of the rice farming process. Immersed in the fate of randomness, we put our trust in soil and in the surprises its every season has in store. Our paradise is called the Lomellina: a certitude for the production of quality rice. In these fields, we manage to select the best paddy rice to use for our products.
Where does the excellence of our rice come from? It comes from its variety, that is to say 100% pure and uncontaminated. This is the fundamental element to choose our rice: the DNA of every grain is checked and inspected. Only 100% pure grains become Terra et Aqua products.
Curing is a natural process which enhances the characteristics of rice and makes it perfect for use in risottos, so it expands considerably during cooking. The degree of curing depends on the year of the rice crop but it is what makes our rice so exceptional. Thanks to a curing process of at least one year, we ensure our rice boasts outstanding shape-retaining properties during cooking, in addition to extraordinary firmness for truly unique dishes.
