CARNAROLI RICE
Carnaroli rice is one of the most prized varieties of medium-grained “superfino” rice. Its aroma is the symbol of Italian rice-making tradition. The grains are exceptionally firm, big and elongated with a small pearl in the middle. It boasts outstanding shape-retaining properties during slow cooking. It is perfect for risottos and complex recipes
GIOIELLO RICE
Gioiello rice is a precious and rare variety of rice. Each grain is packed with an irresistible natural vanilla aroma, which fills the atmosphere with poetic, evocative notes.
It is a fine, wholegrain rice packed with antioxidants. Owing to its superior quality, it is ideal eaten alone, as a side order or as a salad base.

Soil
The success of what we do depends on soil. Every day is a new challenge: the unpredictability of nature allows us to discover each day the effort and beauty that lies in every step of the rice farming process. Immersed in the fate of randomness, we put our trust in soil and in the surprises its every season has in store. Our paradise is called the Lomellina: a certitude for the production of quality rice. In these fields, we manage to select the best paddy rice to use for our products.
Water
Water is an element of life.
Drop after drop, it is the lifeblood for our rice varieties to come to life. The water used on our fields comes from Lake Maggiore: its clear colour and pureness irrigate our soils with wisdom, allowing us to work on our fields to achieve the finest products. Our experience enables us to comprehend the full power of this element and to calibrate its use in a completely nature-friendly way.
Pureness
Where does the excellence of our rice come from? It comes from its variety, that is to say 100% pure and uncontaminated. This is the fundamental element to choose our rice: the DNA of every grain is checked and inspected. Only 100% pure grains become Terra et Aqua products.
Drying
Our farming method is one of the key elements of our work: the best method entails traditional drying on the threshing floor, because it allows the paddy rice to retain all its goodness and achieve excellent shape-retaining properties during cooking. This is a significant factor in determining the texture of the rice: if the drying process takes place at excessively high temperatures, the grain loses its aroma and natural firmness.
Curing
Curing is a natural process which enhances the characteristics of rice and makes it perfect for use in risottos, so it expands considerably during cooking. The degree of curing depends on the year of the rice crop but it is what makes our rice so exceptional. Thanks to a curing process of at least one year, we ensure our rice boasts outstanding shape-retaining properties during cooking, in addition to extraordinary firmness for truly unique dishes.
